
Seriously! Enjoy Thanksgiving! Eat the stuffing, have a slice of pie and then sleep it off!
I know everyone gets nervous around the holidays and gaining weight or falling off track. It’s true that the average American gains 10-15 lbs between Halloween and New Years. I can guarantee you that doesn’t happen in one day. It happens over those 60+ days because you enjoy one day and then two days and then five days and then 60 days. Ya feel me?
So my advice is to enjoy thanksving and not feel guilty because this isn’t a diet it’s a lifestyle and if you don’t enjoy the day you will feel deprived, or worse you will feel guilty after.
I see so many people try to stick to their ‘diet’ through the holidays and end up with a binge. Listen, we are all human and we all want the cookie, the pie, the candy, the stuffing so eat and ENJOY IT. Don’t feel guilty.
That being said, you can certainly make delicious meals for Thanksgiving that are a little healthier than normal and I am always asked for good recipes so let me share one of my faves that is SO easy!
It’s #veggiesmost but also makes my portion fix clients happy with green, purple, blue and tsp, save those yellows for the PIE 🙂 It’s also very budget friendly and easy, there are literally 4 steps.
Roasted Cranberry Almond Cauliflower ‘Rice’:
Serves: 4
About 30 mins total, see it’s easy 🙂
Ingredients:
1 lb Cauliflower Rice
1 Tbsp Basting Oil
1 Tbsp Butter
1 Tsp Thyme
1 Cup Roasted Almongs
3/4 Cup Dried Cranberries
Preheat oven to 400.
Toss cauliflower rice and basting oil in large bowl and season with salt and pepper
Spread on baking sheet and roast for about 25 mins until lightly browned
Remove from oven, add butter, thyme, almonds and cranberries until butter is melted
Season with Salt and Pepper
