I got this message 6 days into our Ultimate Reset from one of my friends. I get tons and tons of messages like this and I don’t share them all, so why this one?
Well, you guys know for the past 2 years since I became a coach, I have been working on me. From the inside, out. Yes, I’ve lost weight and inches. Yes, I feel better. But one thing I’ve been super proud of (it’s good to gloat a little guys!) is my focus. My focus on myself and helping those who need and want my help. And if someone doesn’t need or want my help, that’s ok and I have learned it’s not personal.?
The person that sent me this message wasn’t a hater but more of a skeptic. Which is totally cool, I get it, this isn’t for everyone. She is probably one of the LAST people I thought would join me for the Ultimate Reset, which is arguably Beachbody’s most disciplined program. To say I was thrilled when she messaged me to join us was an understatement. She actually said to me ‘Did you just fall off your chair?’ after she said she ordered.
I’m happy she joined us but I am THRILLED she is seeing results less than a week in. I am so excited to have so many join me on this journey. Do what you love guys, it’s all about the Karma
As for me, I am hanging in! Day 10 and I am much less HANGRY this week. It is showing me how much I actually depended on food and SNACKING. Anyone else ever stand at their fridge just looking for answers? Like I just stand there, grab something and eat it mindlessly and walk away. I don’t even enjoy it. With the reset every meal has to be planned out and I know what I’m going to eat. I am actually enjoying the cooking and this zucchini-cashew soup is amazing. It’s a good thing a made a bunch, recipe is below <3?
Anyways hopped on the scale this morning and saw that I have lost 5 pounds in 10 days. I know that will give me the strength to keep going through the second half of this journey. This weekend is going to be particularly hard since we’re traveling and I have a wedding. I am packing tons of snacks and Shakeology to keep me on track. You better bet I’ll keep you posted.

Ingredients:
1 oz. raw cashews (about 17 cashews)
1? cups water, divided use
1? medium zucchini, cut into chunks
Himalayan salt (or Bragg Liquid Aminos) (to taste; optional)
Herbal seasoning blend (or fresh herbs, like basil or dill) (to taste; optional)
Preparation:
1. Soak cashews in ? cup water for 1 hour.
2. While cashews are soaking, bring 1 cup water to a boil in a small saucepan over medium heat. Add zucchini; cook for 4 to 5 minutes. Drain. Set aside.
3. Place cashews (with water), zucchini, salt (if desired), and seasoning blend (if desired) in a blender or food processor, in 2 or more batches if necessary; cover with lid and kitchen towel. Blend until smooth.
4. Heat soup, if desired, in a medium saucepan over medium heat; cook, stirring frequently, for 4 to 5 minutes or until hot. Do not boil.
5. Soup can also be served cold.
