I am totally obsessed with using my Crock Pot, especially in the winter. I just feel like it’s so easy to put on in the morning set it, go to work and come home and dinner is ready to go.

I find that when it’s dark when I get home during these shorter days, I just do not feel like cooking dinner. Having the crock pot ready to go ensures I eat a healthy meal instead of just mindlessly snacking or heating something up in the microwave that isn’t really good for me. I ALWAYS make a ton of extra too so we can enjoy it for lunches all week. it’s really easy to make mass quantities and freeze for a rainy day too.

Check out this awesome recipe! I personally love mexican stuff so it’s one of my faves. You can decrease the amount of spices if you prefer things more mild.

Taco Chicken Bowls!
Add 1 ? lbs chicken breasts
1 (16 oz.) jar organic salsa, my fave is stuff in the refridgerated section because there is no added crap!
1 (15 oz.) black beans ? drained
? lb frozen corn
1 T. chili powder
1 ? tsp. cumin
1 ? tsp. minced garlic
? tsp. dried oregano
? tsp. cayenne pepper
? tsp. salt and pepper
Put it all on the crock pot and stir. Cook on high for 4 hours or low for 8 hours.
If you want, near the end of the cooking time, cook two cups of brown rice according to package directions. If you prefer you can also use cauliflower rice and it tastes just as good!
You can top with some sliced avocado when you serve for extra amazingness
